My SIL/BIL are visiting this weekend and we've got a great weekend planned for the smoker. I found a 5-pound pork shoulder to smoke for pulled pork on Saturday night, and an 8 lb brisket to cook on Sunday. I've only ever done each of those once, so I'm still learning - but both came out GREAT the first time. It's been a few weeks since I've been able to use the smoker - very psyched for a great BBQ weekend. And - hat tip to Larry's thread - some cornbread on the side. And red wine.

Very nice, enjoy!

One of my favorite things to do w/ leftover brisket (if there is any!) is brisket sliders. Take the brisket and reheat over very low heat with some bbq sauce and a just a little bit of water in a pot. Serve on toasted slider rolls with horseradish white cheddar sauce, thinly sliced yellow onion, sliced jalapenos and pickles. Great way to enjoy the leftovers.

Also, not sure what you do with sauces...but here's a link to the BBQ sauce that I always have in my fridge. I use it on ribs, chicken, brisket, pork chops and even salmon.

I use about 1/2 the can of chipotles and don't use the allspice or clove. I'll also usually add a few shots of Jack just for the fun of it and a little water to thin it out if I'm going to mop in on something while still smoking it.

Here are just a few other tips.

Do you have a pair of rubber or silicone gloves yet? Makes it super easy when flipping and removing foods from smoker or to stabilize a large cut when slicing/chopping. Then just wash the gloves while still wearing like you're washing your hands. They're like $5 at Lowe's or Home Depot.

Also, latex gloves from the drug store are great during food prep if you're doing a spice rub. Easier on hand washing and keeps all the spices out of your finger nails.

Yep, and i have lived mostly in Louisiana all my life and have yet to see a granny ate by a gator:) Stereo types promoted in media can really prejudice us.
